(a) when the smoke point temperature is lower than 170 degrees Celsius (i.e., frying oil is already smoking at low temperature).

(2) deep-fried oil that is dark and sticky, foamy, smelly and has more than half of the foam area of the deep fryer.

(3) when the acid value exceeds 2.0.(It is recommended to buy oil test paper test).

(1) Do not buy oil in bulk or from unknown sources.

(2) Do not reuse or stale oil.

(3) Reduce the cooking method of high temperature stir-fry or fried food.

(4) Smoke exhaust machine should be used when cooking.

(5) When frying food in large quantities, animal fat or shortening should be used, while vegetable fat is not suitable.
